offal vs pluck usunąłem wcześniejszą odpowiedź (offal/innards) jako zbyt ogólną ....

--------

The term offal applies to things that fall out of the carcass when it's hung up, so intestines and tripe. Pluck is the term used for things that have to be removed by hand such as kidneys, heart and liver. - https://theecologist.org/2011/mar/08/how-tocook-and-enjoy-of...

Pluck
Pluck is another word for offal — the internal organs and intestines of an animal, generally large, such as a pig, sheep, calf, deer, etc.
Often though in recipes it is used to mean just the heart, liver and lungs without the intestines.

Postmortem inspection : It will be necessary for the head, pluck (heart, pericardium, liver, spleen, and lung if possible), alimentary tract, genitalia and carcass (with neck and kidney) to be properly identified and presented separately for inspection - Postmortem inspection : It will be necessary for the head, pluck (heart, pericardium, liver, spleen, and lung if possible), alimentary tract, genitalia and carcass

Pluck - heart, lungs, trachea

How is the pluck removed - membranes adjacent to diaphragm muscle are cut and pluck cut free from backbone, removed and put in gut inspection bucket along with liver and gallbladder - https://quizlet.com/325628436/beef-slaughter-flash-cards/

---

While still applying gentle tension toward the thoracic inlet, the heart and lungs are removed by severing or tearing all attachments holding them in place.

At the level of the diaphragm, it is necessary to cut the three attachments (aorta, esophagus, caudal vena cava.) holding the pluck to the abdominal viscera.

Set the “pluck” – tongue, esophagus, trachea, heart, and lungs – aside, in a clean area. - https://vet.uga.edu/oldvpp/programs/afvet/attachments/how_to... - page 15
