I consider the term "apasionante" can be applied to learning and conveys that makes the student get very involved in the learning process. I attach examples where this expression is used.

y que cautiva a los estudiantes

Hay muchas referencias en Google a "cautivar a los estudiantes" dentre de un contexto de aprendizaje universitario.

Parece que la frase “cautivar a los estudiantes” se utiliza más con referencia al aprendizaje de niños y adolescentes, pero se encuentra en contextos de enseñanza superior también.

experiencia de aprendizaje atractiva - enriquecedora - estimulante - atrayente - motivadora - etc.

Creo que hay muchas opciones válidas.

Participativa, fascinante...
