White Fish
White Fish is a term used to group fish together based on their eating and cooking qualities.
More scientifically, they are also called Demersal fish, because they tend to live on or near the bottom.
They have lean, white, delicate flesh which tends to cook up flaky.
White Fish has more delicate flesh than Blue Fish.
White Fish pieces often requires some coat of coating to protect them when shallow-fying.

Si definiscono demersali quelle specie di organismi marini che nuotano attivamente ma si trattengono nei pressi del fondale, sul quale o nei pressi del quale trovano il nutrimento.
Ad essere demersali sono soprattutto i pesci ed i molluschi cefalopodi come le seppie. Tra i pesci demersali si annoverano numerose specie di notevole interesse economico come merluzzi, naselli, triglie, quasi tutti gli sparidi, spigole, ecc. Anche alcuni crostacei come il gambero rosso sono considerati demersali.
