paleta

The flatiron steak is taken from the shoulder blade. This is known as "paleta" in Argentina.

The actual way the animal is broken down into smaller cuts will change from country to country. Sometimes the same name will indicate a slightly different cut. I learned this the hard way while cooking in Buenos Aires after going to culinary school here in NYC.
