It looks like they just mean the subject/patient under study, but I'd like confirmation as I can't find it in any of my dictionaries:
MOLECULAR STUDY AND DIAGNOSIS: A study of the HFE gene mutations (H63D, S65C, C282Y) was carried out by means of PCR-RFLP technique at the 12 de Octubre Hospital (report attached). Results: *el probando es heterocigoto compuesto para las mutaciones H63D y C282.*

Tienes razón, creo que lo adecuado es "the patient under study",
Si le están realizando estudios en un hospital, es porque probablemente es un paciente.
En mi opinión es lo más adecuado.

"el probando" means more than the patient under study and has specific significance in genetic research. But if you wanted a nice humane answer, go for it, lol. I prefer to be precise in my medical translations :-)

Proband: The family member through whom a family's medical history comes to light. For example, a proband might be a baby with Down syndrome. The proband may also be called the index case, propositus (if male), or proposita (if female).
