Article on Italian chef in Russia
From an article on an Italian restaurant in Russia and its executive chef:
Lo chef-executive inizia a enumerare i pezzi forti di un menù da 150
piatti, all' insegna del tricolore. Alto livello rispetto a una media di
palati 'in via di raffinazione', ma con grande capacità di spesa.

average palate, not yet refined
This was a well done presentation of the standard fried onion. It was delicately cut and came with a very sharp dipping sauce. We thought the onion was a little too spicy and the dipping sauce had a little too much horseradish for the average palate.

for average gourmets still evolving into connoisseurs
....my interpretation
evolving into connoisseurs OR on the road to become connoisseurs

: un modo elegantissimo di dire che i piatti sono quasi "sprecati" per la media di clientela ;-) // p.s. forse invece di *still evolving* si può mettere *yet to evolve*

giusto *yet to evolve* era tra le alternative poi d'istinto mi è venuto quel *still evolving*. Grazie Nicolò

: I like it, but "average gourmet" is a bit of a contradiction in terms. How about "average diners still evolving into gourmets"?

Yes, you're right, I was misled by the fact that those russians who seem to like italian cuisine (and squander all their money in a posh restaurant) must be gourmets after all. Thanks for your accurate suggestion and sharp eye on word choice.

: yes, but I would simply leave out the "average" - i.e. "for gourmets on their way to becoming comoisseurs"

average palate that has still to complete its education
Another option. It's a bit unwieldly but plays on the widely used "educated palate"
Something went wrong...
