excellent sausages and cured meats

sausages = saucisses

But I am not sure what "cured meats" means. I looked for the original text in Portuguese and it refers to "enchidos" and "morcelas". Morcelas = boudins noirs. (But the text in English I must translate is not necessary "the same" as in Portuguese).

neutral emiledgar : As I noted above, salaison refers only to salting meats, whereas curing covers many preserving techniques uncluding smoking and drying as well as salting.

well, without copying pages of google, I see that many places advertise charcuterie et salaisons, which would seem to me to be deli and cured meats.
