to pick the flowers by hand

harvest the flowers may be another option
"sfiorare" has two meanings - one take the blossoms off, the other to "brush..lightly touch" something. I hope I chose the right one!

Note that in gardening when the flowers die on a plant (such as mums), in order to encourage growth and additional blossoms the plant is
"dead headed" meaning the dead flowers are taken off. Zafferano is a bulb ( a tiny one..I grew some!) therefore this would not be applicable. The pollen of the flower is the end-product

This method is recommended for the following reasons:

The first part to appear in early autumn is the flower. The flower consists of three sepals and three petals of the same lilac color which makes them hardly distinguishable.
There are three stamens, and filaments are twice as long as the anthers. Out of the single-ovule ovary in the center of the flower grows a long thin style of a light yellow color which ends in a triple stigma of 2-3 cm length and bright orange red color.
