I agree with you that it doesn't sound v mouthwatering, but in the google hits I've read (mostly leading to one original recipe) all the cognoscenti seem to rave....

More of a rocky issue is perhaps the question of whether to call it "veal" or "beef". If it's for use in Spain, veal is an option, but I know the effect this tends to have on diners in the UK!

I am Chef with extensive experience in the UK and Mexico in michelin starred restaurants, and the correct term is the one I suggest above. In a menu, it would be written this way around as opposed to 'bone marrow' as has already been suggested. This is the way I have seen it referred to it in the past in restaurants in which I have personally cooked the dish!
