"Queso fresco" is not cottage cheese as it is more solid but not as strong flavoured as other cheeses I believe. Can anyone please give me an equivalent name in English.... it is not a spread either to my knowledge.

A bit of spanner in the works that it also describes itself as "queso blanco"...

But as I said to Carol, not available afaik in the UK so I don't know where to look for an English version of the name of the product. My inclination would also be leave it as it is (see Tara's comments), although if this is for the US, then Claudia's link is interesting.

Had originally thought this would be for the UK since Eileen is in Spain, but the context you quote from sounds American.... Could you confirm target readership pls?

@asker Have a look in wikipedia "quesillo". No es Farmer's cheese ni cottage ni fresh cheese. De hecho no se hace como queso, no tiene corteza, se prepara en una tarde, etc.

leave as is? Must you translate this term? Often with food items it is better to leave it as is and if absolutely necessary use a note in parentheses to explain. In the US, at least, Mexican food is quite common, and most people have no problem using and adapting to the Spanish term.

There seem to be plenty of uses of Queso Fresco, for example, in recipes written in English:

unripened cheese

Fresh cheese is definitely used for this, but if you want to avoid it for not being too explanatory in English, I suggest this term.

I have had this issue when translating Portuguese recipe books. In the end, we decided on unripened cheese. In the UK most such cheeses, where available, are given their local name (e.g. Ricotta or Paneer). But as a generic term fresh cheese, unripened cheese or curd cheese are used.

Most fresh cheese is made by curdling milk with an enzyme, and then draining off the whey. The curds that remain are molded into cheese. Fresh cheeses tend to be bland, so they're often used as vehicles for other flavorings. Some, like cream cheese, are used to make dips or cheesecakes. Others, like ricotta cheese, are used as fillings for dumplings, pasta, crepes, or pastries. Still others, like cottage cheese, can be a meal all by themselves once they're perked up with herbs, fruit, or other flavorings.
Fresh cheeses have a higher moisture content and are usually lower in fat and sodium than other cheeses. Most are highly perishable, so check the expiration date when you buy them and keep them tightly wrapped or covered in the refrigerator. Moist fresh cheeses like cottage cheese and ricotta should be eaten within a week of purchase; firmer cheeses like cream cheese and farmer's cheese can usually be stored for about two weeks. Don't eat fresh cheese if mold appears on it.
Tips:
• Fresh cheese work best in cold dishes.
• Fresh cheeses tend to break when added to hot sauces, so add them at the last minute.
• Lactose-intolerant people may prefer aged cheese over fresh, since aged cheese contains less lactose.

neutral Tara Orzolek : As a native speaker, if I saw this on a menu in English it would seem odd. "Fresh" in the context of food means something that was just made - e.g. freshly squeezed orange juice - but I don't think that would be the case here.

disagree Brian Schwarz : I would leave the term as is if referring to the popular Mexican cheese. In most of the urban U.S., Queso Fresco is a common cheese that you can buy at any supermarket. There are too many "fresh" cheeses to use "fresh cheese" here.

The term in Spanish is as general as in English, all "quesos frescos" have different names depending on the country. The only common characteristic is that they are white and soft, because of their easy production procedure.

agree Isamar : I agree though I would also leave the Spanish name in. In Spain, if you try Manchego fresco, it's white with no rind, and has a very delicate taste. If left to mature, as the water content decreases the taste increases and the texture hardens. Any help?

Farmer's cheese

In Spanish, the name of the cheese means “fresh cheese.” Classic queso fresco is snow white, very soft, moist, and mild in flavor. The cheese is also rather crumbly, making it ideal for crumbling over dishes like salads and enchiladas. The creamy cheese is also used as a filling in many Mexican dishes. True queso fresco will soften and become creamy when heated, but it will not melt. This unique property distinguishes queso fresco from similar cheeses.

The cheese is always made from cow's milk, and could be likened to farmer cheese or pot cheese. To make queso fresco, milk is curdled, salted, and lightly pressed. The aging process for the cheese is very brief, usually no more than a few days, and then the cheese is sent to market. Traditional queso freso is good for around five days, although many dairies add stabilizers and handle the cheese slightly differently to extend the shelf life.

Fromage frais

I wouldn't hesitate to use the French name, since this is how it's very widely known in the UK, as you can see from the numerous recipes, etc, below. There is no "English equivalent", and fromage frais is available in all supermarkets
