This is from a lecture held by a marketing crack to students, any help much appreciated

It depends on what the the marketing crack is getting at...aside fromn selling his product. "bierernst" could refer to the consequences of intoxication, whilst "bierisch gut" might describe the pleasure of enjoying a good beer.
More context is definitely needed.

Is it about beer? There is no way to come up with a "translation" or even a suggestion for this play on words without knowing what it is about. Not even a German native speaker like me can tell what is meant by this text fragment. Could be anything.

bierernst usually means dead-serious. However, more context would be great. I presume it's an intended pun.

beer-ish/beerish serious to beer-ish good/delicious

after searching the web I found beer-ish serious - some spell it beerish. It is also used as beer-ishly or beerish taste etc.

neutral Jack Corrigall : See Kim's comments above - I don't think anyone can provide an answer until more context is given. The topic of the talk may have a huge influence on what loss is acceptable in the translation process.

disagree Helen Shiner : Whatever turns out to be the context, an EN speaker is not going to make much sense of 'beerish' unfortunately, even if replaced by 'beerishly'.//From the examples you give, the meaning is quite different from the meaning to be conveyed here.

Thanks for your comment. However, why don't you visit the websites and see how often it is used on beer-sites ... and not German sites
