First of all, apologies for the swearword; however, this is an example sentence from a serious and highly-rated dictionary of idioms.

Here's the full sentence:
Herifler dağ yabanisi arkadaş, ayıdan bir farkları yok … Lâkin atıcı teresler! Tüfengi omuza dayamak, sol gözü kapatıp «gez, göz, arpacık» demek ne siktirir.

It's really the last six words that I can't make head or tail of.

The last six words as you ask has no meaning. Original excerpt reads "«gez, göz, arpacık» demek ne sektirir", where "sektirmek" means "to miss". This may make this kudoz entry redundant but anyway the meaning can be rounded as above.

what the fuck is saying "sights"

"ne siktirir" is "what the fuck".
"gez, göz, arpacık" is aiming a gun by aligning your eye with the hardware on the gun (the bead, etc) so that the target is aligned with your eye (göz) and whatever is in between (a line of sight).
