The Aiming plate is used to assist with the accurate placement and angle of the probe. It is important that the measurement positions on the carcass are accurate and repeatable. With the probe being held in the right hand the carcass is steadied with the left hand. The measurement position is found by lining the vertical green line with the centre line of the backbone.
