Should I say: "You can return these documents under closed envelope to us through school." or rather "You can return these documents to us through school under closed envelope."
Or even another suggestion?

you will need to provide some contex; you are right that the word gesloten translated into English means closed but without the context there are two ways to interpret the meaning and it all depends on whether the envelope had been included in the letter you are translating.
If the reader can provide information back to the school in an envelope that was included with the original letter then the translation would be:
You can return these documents to the school in the enclosed envelope.
However, if there is concern that the documents to be returned are sensitive (eg medical or disciplinary documents) then the translation should be:
You can return the documents to the school in a sealed envelope.
