I have been coming back to thsi phrase for 24 hours and am still stuck. At the moment I have "the complexity on the mouth is ....", which has plenty of hits but I'm just wondering if there is anything closer to the rather odd original.

I often feel that tasting notes are a fertile field for wannabe poets. Sounding OTT is not a problem, but there are limits to the acceptable level of weirdness.

I feel here that (a) "perfectly balanced", being a standard term, should go in as is, if at all possible, and (b) the lace metaphor should be preserved if possible, rather than watered down.

I'd separate the balance from the lace; that connection doesn't make much sense to me. Lace is not the first comparison you'd choose to express balance. But lace is beautiful and intricate, and the latter is the key here to my mind. By all means keep "complexity" if you'd prefer (and that's a favourite term in tasting notes), but "intricacy" does the same job, I feel, and fits better with lace. I'd throw in "fine", just because it sounds better to me, and dispense with "tela", which adds nothing.

So that's what I've ended up with. Personally, I could imagine an English-speaking wine buff saying it.

As an afterthought, lace is delicate as well as intricate, and you could perhaps say "with the intricate delicacy of fine lace", or even just"with an intricate delicacy", and not mention the lace at all. I like the "woven/weave" idea, but it's not easy to fit it into the whole phrase.

a lace material

I would translate it as it is in Spanish, to keep the source oddity... i. e.

the complexity on the mouth is like a lace material perfectly balanced...

What do you think?

My suggestion was not to go over the top in English. Charles has it, but lace in the mouth sounds a bit off-putting in English.

finely layered (on the palate)

"tela de encaje" sounds to me like "finely layered" in this context.

There are numerous references to "finely layered" wines. Hope you find it useful.
