I know that the ley de uniones estables de pareja is the cohabitation law, but what would these unions be called in English? Civil Unions?

Context: Coherentemente con ello, el artículo 40.7 del Estatuto establece que «los poderes públicos deben promover la igualdad de las distintas uniones estables de pareja, teniendo en cuenta sus características, con independencia de la orientación sexual de sus miembros» y que «la ley debe regular estas uniones y otras formas de convivencia y sus efectos».

Another reference Cohabitation usually relates to an unmarried couple, either straight or gay, living together as partners without entering into a marriage or civil partnership.
English and Welsh law draws a sharp distinction between those in a marriage or civil partnership, and those not in one.

Civil partners, as with cohabiting couples, are considered financially separate from each other; they have no obligation to clear each other’s debts and have separate tax allowances, however when it comes to maintenance if the relationship dissolves, civil partners do have an equal duty to maintain each other, this means if taken to court they can claim money from their partner for things like childcare and joint assets. If you are in a civil partnership then your partner is your next of kin, however if you are cohabiting then next of kin is a blood relative, this means if you should go into hospital your partner may not automatically be allowed in to visit you. - See more at: http://whensallymetsally.co.uk/features/civil-partnership-la...

I was found this to be an incorrect translation going back to this. I can't reply above - not a big deal if you are wrong on this, but I think it needs further investigation. This text is for Spain, Catalonia, and I don't believe it means civil partnerships in this instance so revisit it when you get a chance. NBD.

Civil partnerships

The Civil Partnership Act 2004 (c 33) is an Act of the Parliament of the United Kingdom. The Bill for this Act was introduced by the Labour government and supported by the Conservative and Liberal Democrat opposition. The Act grants civil partnerships in the United Kingdom with rights and responsibilities very similar to civil marriage. Civil Partners are entitled to the same property rights as married opposite-sex couples, the same exemption as married couples social security and pension benefits, and also the ability to get parental responsibility for a partner's children, as well as responsibility for reasonable maintenance of one's partner and their children, tenancy rights, full life insurance recognition, next-of-kin rights in hospitals, and others. There is a formal process for dissolving partnerships akin to divorce.
