When deciding between easy and pro, err on the side of pro. Most questions will be pro.

The owners want to make enough money for maintenance and upkeep so, besides having a working farm these estates will often have garden and house tours, coffee shop and even concerts
an example here: they have a working farm/sawmill/butchery and tours. They probably sell plants as well from the gardens and have other stuff happening

lots of different meanings of the word "estate" but, in this case, with the combination of "working" I am assuming it's a stately/big house with an estate of land that is farmed commercially.
So, an estate or landed property with a working farm (=a real farm rather than one just for show).
However, these days most of these estates carry on other activities (like forestry/cheesemaking etc.) as well as the income from farming is not sufficient Note that many of these estates have been converted into golf courses.

Context is always needed as there are various types of estates.
But some type of farming and/or forestry would constitute the "working" part...
rather than a golf course or hotel where the lands are not being worked, like this one:
