Aubergine But definitely "aubergine" as opposed to "eggplant". I can't see how that could ever sound like native-lingo in this country.

I don't see much difference between the images of "compote d'aubergine" and "compotée d'aubergine" on the web. It is a common enough dish that it's the name of a frozen meal and the picture on the pack isn't especially caramelised.

I don't think this is a compote! I think you might find that "marmalade" is closer in English - it certainly looks very similar to the onion marmalade that I occasionally prepare. Perhaps a bit too lumpy and sticky for a compote...?

If we do decide that it's not a compote, it might be best to leave it in French. "Stewed" doesn't necessarily sound very appetising.

Another alternative if your audience is not American:
Eggplant is the most common in the US.
Aubergine is the term used in UK and some other variations of English.
In South Asia and South Africa, it is best known as brinjal.
