This is about the effect of the weather on the vines.

'... que nous laissions un peu plus de feuillage pour éviter les grillures du soleil.'

I have found this as a definition in French: 'dessèchement des feuilles de la vigne du au soleil, à la sécheresse, au vent ou à des parasites comme la cicatelle' and have tentatively put 'to prevent drying damage from the sun'

Any comments would be welcome

I'd go a little further, as 'griller' is clearly related to 'burning' — of course you can't actually use 'sunburn' here, but I think that's the direction to go... maybe 'to avoid... getting burnt up by the sun' etc.
