On reflection, my question is what is being gilded? Are the tools for working wood that is subsequently gilded? If so, this answer is fine.

This explains the process reasonably well: "Traditional engraving, by burin or with the use of machines, continues to be practised by goldsmiths, glass engravers, gunsmiths and others," https://en.wikipedia.org/wiki/Engraving

Here is another link you might find useful: http://www.theconservationcenter.com/articles/2017/11/27/wha... If the material being worked is gesso, then “gesso carving hook” is probably more appropriate. You will know from your source text, I presume, which materials apply. The décor of old theatres and opera houses was made of a variety of materials. Anyway, I’m sure you know this ;-) Just appending it for future visitors as much as anyone.

: Not necessarily a palm tool and not normally used for gilding, but the source text says a burin can be used for gilding.

: Or burnisher https://bookbinding.com/bookbinding-for-amateurs/ accessed 14 May 2020, cited in the footnotes in the Wikipedia/engraving item. The Boesner gilding tools shown differ from the burins (Stichel) for printmaking (intaglio) - no matter.

Comment: "thanks Helen for the rapid reply, also to all the others kind enough to reply; I suppose it is a carving tool, but this fits the context best."
