Hebrew term

אני פורק עליו

Hebrew to English Other Slang audio clip of police chase
Is this slang? The full context is

שלא יבצעו שום ירי לכיוון המשאית כי אני פורק עליו, שלא יהיה לנו פה עכשיו איזה דו"צ

Would it be "because I am taking it apart"

Raiding/Seizing

It most likely means raiding the truck, as in stopping it and/or otherwise taking control over it.

It could also mean 'discharging my firearm towards his direction', though less likely given the full context.

Disarming it

its פורק and not מפרק so your suggestion is wrong.
By the way דו"צ :

I am dismounting from the vehicle

לפרוק in army lingo means to dismount from a vehicle (as in rapidly, in order to attack).

The sentence here probably means "I am dismounting to attack him / get to him".

Loading or Unloading equipment

By the direct meaning of the sentence, the translation would be "I'm unloading equipment." It would make more sense that it says: "I'm loading equipment." Either way, it suits the context. Of course, for a fully accurate translation the whole piece must be read, because it could have several completely different meanings.
