Level 3 Diploma in Cooking Techniques
Seeing as institutions name their courses differently, I would use a general term.
A Level 3 Diploma is for the UK. You could also say Level 3 Certificate/Award.
In Spain a 'Ciclo de Grado Medio' is a two-year course that comes after the Obligatory Secondary Education (ESO) in Spain. Students have to have their 16th birthday during the year they start the course.
Level 3 qualifications recognise the ability to gain, and where relevant apply a range of knowledge, skills and understanding. Learning at this level involves obtaining detailed knowledge and skills. It is appropriate for people wishing to go to university, people working independently, or in some areas supervising and training others in their field of work.

Regarding the other courses, I think I would use Level 3 Diploma/Certificate/Award in Baking, Confectionary and Patisserie Techniques.
A 'Ciclo de Grado Superior' could be a Level 4 Diploma/Certificate/Award.
I say 'could' because I am haven't compared the number of hours/credits. I'm just going on the fact that a 'Ciclo Medio' does not grant entrance to university in Spain, whereas a 'Ciclo Superior' does.
