Come ha detto Luisa l'espressione è anche sinonimo di salsa (fatta con aglio) ma essendo un revoltillo non credo ci sia salsa. Mi sembra piuttosto un ingrediente aggiunto alle uova, insieme ai gamberetti.

Forse mi sbaglio, ma un aglio è fresco (e quindi sicuramente molto tenero) o secco. Forse spicchi più piccoli possono essere intesi come "teneri". Ma la mia è SOLO una supposizione.

Secondo la RAE "ajete" è sinonimo di "puerro silvestre"`e quindi potrebbe essere tradotto come "porro selvatico" (dal latino "Allium Ampeloprasum").
