Having looked at their work (eg. http://www.letman.com/), my guess is the "critiques" here is to distinguish them from commercial "graphistes", ie is meant to suggest their more independent or avant-garde nature.

I am tending towards leaving out the hyphen. I would drop the 'graphic' bit if at all possible. Hopefully it is obvious from the context.

I think it means, in your case, that the work of these guys is critiquing/critical in intent, but that is difficult to say in so few words. What is not clear is what they are critiquing. [How do you spell critiqueing?]
