No further context I'm afraid, except that this comes from a Spanish restaurant menu, in the starters section along with a bunch of other fishy items. I've not come across "letones" before and am at a loss.

I STRONGLY recommend you do not offer an explanation of what letones actually are!!! Much better to classify them as "different kinds of roe".... Otherwise no foreigner will ever order them, except for the "I ate fish sperm" stories they can tell on return home.

Sorry, the slightly more explanatory version should read *Fried or grilled variety of (fish) roes"

Roe is normally used in conjunction with the type of fish, rather than just fish, as in "cod roe", "sea urchin roe" (Oricios yum!).

I'm still inclined not to state more than is strictly necessary so as not to put off the squeamish! Carol's soft roe sounds an excellent option for milt/letones. But whether the huevas come out as hard I am not so sure - certainly not if it's oricios - or caviar for that matter. But I suspect this more likely to be cod roe or similar, which is quite solid and comes in slices.

Tengo entendido que el pescado para preparar las letonas debe ser grande y de carne blanca (mero, merluza).
Huevas claro está que son fish eggs or spawn of fishes (normally salted, although they are also fried).

*Letones en agruras
Se cogen los letones, preferentemente de pescada, pero sirven de cualquier pescado grande.

Se lavan muy bien y se hierven en agua con sal, perejil y unos granos de pimienta negra. Cuando ya están hervidos se apartan y se ponen sobre una fuente.

Se le escurren unos limones, se riega de abundante aceite sin refinar, se espolvorean de pimienta negrea y se le añaden unas ramas de perejil.
