I know حبوب can mean "grains" and "seeds", but in this case I wonder if it is actually referring to things like lentils and chickpeas? Pulses perhaps? It's just that grains and seeds are not what first springs to mind in traditional Arabic cooking.

You are right

It indeed refers to lentils, chickpeas and(fava,white and broad beans etc.) which are part of the Lebanese diet.

depending on the context's register you could use either "legumes' or "peas and beans"
