Any ideas of what a "cipollotto fondente" might be and how best to translate it into English? For "cipollotto", I thought of using "scallion", but I'm not sure about the "fondente". The phrase occurs in the description of a dish on a menu, so I don't have much other context I'm afraid. The dish consists of a slice of cod cooked with various sauces and flavours and served "con un cipollotto fondente". Thanks in advance for your help.

Most images I have found for "cipollotto" are most certainly of spring onions - not many of scallions or normal onions, so may be safer to use this.
I would also stick with fondant. These days with the amount new creations in cookery there are many not so usual terms being used to describe dishes. And there are examples of this on Google anyway.

: Cipollotto is a "SPRING onion", which in England is usually used very differently from a normal onion. I think the distinction is very important, particularly when describing a recipe.

How about melted for fondente? Google "melted scallions" and take a look. I would think they have braised this particular scallion until (as onions do) it's practically "melted". HTH

spring onion sauce
I found many recipes under this name. They don't all follow the exact same procedure, but basically: sautè chopped or sliced spring onions in butter until soft, then add a bit of broth (or lemon juice or cream or other ingredients) and simmer slowly. The recipe reference below is for fish, like yours.
