The VAT threshold in the UK is so high, that very few translators have to register, and not many do it voluntarily. It just increases the administration, with little benefit.
Can't see any relevance.

If you wish to let the person know what you are doing, then say, you are a freelance translator. If you prefer to be a bit cagey, or you think it sounds more interesting, say "enterpreneur", or choose Mervyn's method to engage their interest. There are no set rules. It is natural to tailor the answer to the situation and the people you are talking to, or the effect you want to achieve.
